Spicy Steak Kabobs

Ingredients:

1 boneless beef top sirloin steak, cut 1 1/4 thick, about 1 1/2 lbs.
2 tablespoons chopped fresh cilantro
2 tablespoons virgin olive oil
1 tablespoon Hot Sauce Harry's Habanero Sauce or 1 tablespoon Hot Sauce Harry's Cayenne Pepper Sauce
1 clove garlic
1/4 to 1/2 teaspoon crushed red pepper (optional)
2 large onions (Vidalia onions if you can get them), cut into quarters
1 large red bell pepper, cut into 1 inch pieces
Salt to taste

Directions:

Trim fat from beef steak. Cut steak into 1 1/4 inch pieces. Combine cilantro, oil, pepper sauce, garlic and red pepper in a zip lock bag. Add beef, toss to coat. Marinate if you have time for 1 hour. Alternately thread beef, red pepper, and onion onto metal skewers. Place kebobs on grid over medium coals or medium heat gas grill. Grill uncovered for 8 - 10 minutes for medium-rare, turning occasionally. Season w/ salt if desired. Makes 6 servings. Serve with fresh salad and hot French bread! Yummy!

Beef Tenderloin w/marinade

Ingredients:

4lbs. approx. beef tenderloin
1 c. soy or teriyaki sauce
1/2 c. bourbon
1/4 c. worcestershire sauce
1/4 c. cookies bbq sauce(any flavor)
2 T. brown sugar
1/2 tsp ground ginger
2 T. minced garlic

Directions:

Mix the above together and marinate the beef tenderloin in the mixture for at least 4 hours and up to 12 hrs. Drain off marinade and reserve it. Season the tenderloin with Cookies Flavor Enhancer and coarse ground black pepper. Let tenderloin sit for 30 minutes. Pour reserved marinade in a pan and bring to a boil, then turn down heat to reduce marinade by about 1/4 of what you start with. In a heavy skillet over moderate to high heat with 1/4 c. oil in..sear tenderloin on all sides then place in 400 degree oven until internal meat temperature reaches 135-140 degrees for medium rare(takes approx. 40 minutes)but watch carefully so it doesn't overcook. Let rest for 10 minutes for the juices to settle. Slice and serve with the reserved sauce that has been reduced down...mmmm good!!!!

Dynamite Tenderloin

Ingredients


1 pork tenderloin separated into two pieces
3/4 cub Hot Sauce Harry's BBQ Sauce
1/3 cup orange marmalade
1/2 tsp Hot Sauce Harry's Dynamite Hot Sauce
1 tsp horseradish (optional)

Directions

Clean tenderloin and remove silver covering and fat.
Mix together all other ingredients.
Put tenderloins on a medium hot grill and baste with half of mixture.
Heat remaining mixture over low heat.
Slice tenderloins, arrange on plate, and pour heated mixture over slices, and serve.

 Speed's Rack of Ribs

Ingredients:  

3 racks of pork ribs
1 can of your favorite beer
3 T. liquid smoke
Cookies Flavor Enhancer
Cookies Western Style Bar-B-Q Sauce

Directions:  

Mix can of beer with the liquid smoke. Pour marinate over ribs and place in refrigerator overnight or a minimum of 4 hours. Remove ribs from marinade and place on individual pieces of foil. Season with Flavor Enhancer and seal foil tight. Bake at 300 degrees for approximately 2 hours. Remove ribs from foil. Drain and pat ribs dry. Cover with Cookies Western Style Bar-B-Q Sauce. Place back in oven for additional 30 to 45 minutes.

Mexican Lasagna Roll-ups

Ingredients:

8 uncooked lasagna noodles
3 cups salsa (choose from Hot Sauce Momma's great selection)
1 lb. ground beef
1 package (1 1/4 ounces) dry taco seasoning mix
1 cup (4 ounces) shredded Monterey Jack cheese
1 cup (1/2 pint) sour cream
1 can (2 1/4 ounces) sliced black olives, drained (1/2 cup) optional

Directions:

Preheat oven t0 350 degrees. Cook lasagna noodles according to package directions, drain and set aside. Spread 1 cup salsa onto bottom of 9"x13" baking dish that has been coated with nonstick vegtable spray: set aside. In a medium sized skillet brown the ground beef over medium high heat for about 10 minutes; drain excess liquid. Stir in taco seasoning mix and 1 cup of salsa. Cut each noodle in half, spread each half with 2 tablespoons of beef mixture and roll up. Place the roll-ups in baking dish. Pour remaining cup of salsa over the roll-ups and sprinkle top with cheese. Cover lossely with aluminum foil and bake 22 to 25 minutes or until cheese is melted. Before serving, spoon 1 tablespoon sour cream on each roll-up and sprinkle with sliced olives.

NOTE:

Use any salsa heat you like.....the choice is yours.


 
Harry's Gator Chili:

Ingredients

1 1/2 lbs ground beef
1 onion chopped
1 cup green and red peppers
chopped garlic minced to taste
1 can diced tomatoes
1 can tomato sauce
chili powder to taste
1 tsp salt Hot Sauce Harry's Habanero Hot Sauce to taste
Hot Sauce Harry's Cayenne Hot Sauce to taste
1 can chili beans
1 tbs Worcestershire
1 tsp oregano
1 tsp sugar
2 bay leaves, broken in half.
6 pack beer (or more) of your choice

Directions

Brown ground beef. Saute onion, green and red peppers and garlic In large pot. Combine remaining ingredients. Stir well. Simmer 45 minutes covered. Simmer 45 minutes uncovered. Put beer in freezer for the last 20 minutes. Serve in tortilla bowl and wash down with ice cold beer. Enjoy!
